How About a Recipe With White Beans That is From a Plant Pure Nation?

A new documentary about the benefits of a plant based lifestyle is coming to Portland, Maine.
On September 17th and 23rd at 7pm, “Plant Pure Nation,” will be shown at The Nickelodeon.

With the help of a state representative, nutritional scientist and bestselling author T. Colin Campbell and his son Nelson, work together to propose a pilot program in a Kentucky community that would document the health benefits of a vegan diet. Campbell’s name may sound familiar. He is the author of, “The China Study.”
That book was later made into a documentary called, “Forks over Knives.”forks

The film goes through the battle with Kentucky state officials over implementing the program and follows several individuals who try to lose weight and improve their biometric testing by eating plant-based meals.

A cookbook has also been released as part of a companion with the film.

One of the recipes in the Plant Pure Nation Cookbook is for white been chili. It has 18 ingredients, but only takes about 20 minutes to prepare and 30 minutes to cook. The chili is delicious and very healthy for you.pure plant nation

2 15-ounce cans cannellini beans, rinsed, drained, divided
2 cups vegetable stock, divided
1 celery stalk, diced
1 onion, diced
4 garlic cloves, minced
1 jalapeño pepper, seeded and minced
1 red bell pepper, seeded and diced
2 tablespoons chopped fresh cilantro
1 cup corn, frozen
1 1/2 cups canned white hominy, rinsed and drained
1/2 teaspoon cumin powder
1/2 teaspoon coriander
1 teaspoon chili powder
2 tablespoons nutritional yeast flakes
2 teaspoons lime juice
1 8-ounce can green chili peppers
3/4 teaspoon sea salt
1/4 teaspoon black pepper


Place half of the cannellini beans in a blender with 1 cup of vegetable stock and blend until smooth and creamy. In a large soup pot over medium-high heat, sauté the celery, onion, garlic, jalapeño, and bell pepper in 1/2 cup of the vegetable stock. To the pot of vegetables, add the remaining 1/2 cup vegetable stock, the remaining half of the beans, the creamy bean mixture, and the rest of the ingredients. Cook over medium heat for 20 to 30 minutes or until vegetables are tender and broth is creamy.
